PNW-STYLE ROCKFISH TATAKI
W/ GINGER-SESAME DRESSING

INGREDIENTS


1/2 lb fresh Pacific Rockfish
1/4 cup sesame seeds, black or white work equally well
1 tbsp freshly ground black pepper
1/4 cup canola oil for cooking fish
2 tbsp lime juice
kosher salt

For ginger-sesame dressing
1/2 tsp fresh grated ginger
1/4 cup tamari
1/4 cup lime juice
1/4 cup grapeseed oil
2 tbsp sesame oil

INSTRUCTIONS

To prepare the Rockfish: Season rockfish with salt. Gently slice the rockfish with incisions running halfway deep, at ¼ inch intervals – this will help with slicing the fish later.

On a plate, mix sesame seeds and black pepper. Roll the fish in the sesame seed-black pepper mixture. Gently press the mixture into the fish to ensure it sticks.

To cook the Rockfish: Heat the oil in a sauté pan over high heat. Sear the rockfish on all sides, approximately 30 seconds per side. Remove the rockfish from the pan and set aside. Deglaze the pan with lime juice. Pour over the fish. Let rest for five minutes. When ready to serve, slice rockfish along the pre-sliced incisions.

For dressing: In a bowl combine fresh ginger, tamari, lime and black pepper. Slowly whisk in olive oil and sesame oil.

To serve: Set slices on a plate and drizzle with ginger dressing. Garnish with cilantro, thinly sliced fresno chilies, fried garlic, sliced scallions or microgreens.
