ROCKFISH IN THAI RED CURRY SAUCE
INGREDIENTS
1/2 1.5 lb Pacific Rockfish fillet (skinned and boned)
1 can coconut milk
1 tbsp red curry paste
1 tbsp fish sauce
1 tbsp sugar
salt and pepper
thai basil
fresno red chili (for garnish)
lime (for garnish)
INSTRUCTIONS
For Rockfish: Lightly salt and pepper the rockfish, and place on a slightly oiled cookie sheet. Cook in the oven at 350° for 10-12 minutes.
For Red Curry Sauce: Place coconut milk in a pan and bring to boil, then reduce heat to simmer. Add red curry paste, fish sauce and sugar and simmer for 10 minutes. Add a handful of Thai basil right before serving.
To Serve: Drizzle red curry sauce over fish. Garnish with chopped Thai basil, sliced Fresno red chilies and a wedge of lime. Serve with rice. (Serves 4)
