ROCKFISH CONFETTI CEVICHE
Serves 2-4
INGREDIENTS
1 ½ lbs. rockfish filets, cubed
1 tsp. salt
¼ tsp. ground black pepper
2 celery stalks, small diced
½ red bell pepper, small diced
½ red onion, small diced
1 medium English cucumber, small diced
3 tbsp. fresh cilantro, chopped
8-12 limes, freshly squeezed
1 C cherry tomatoes, diced
1 avocado, diced
INSTRUCTIONS
Add all ingredients to a bowl except for the avocado. Stir to combine, cover, and place in the refrigerator for at least 60 minutes, or until fish is firm and cooked through. Before serving, toss in the avocado and adjust seasonings as desired. Serve with cucumber slices or tortilla chips and enjoy!
