MISO BUTTER SOLE
INGREDIENTS
1.5 lb Pacific Dover Sole or Petrale Sole filets (skinned and boned)
4 tbsp butter
2 tbsp white miso paste
5 green onions, finely chopped
kosher salt to taste
flour
cilantro (for garnish)
lemon (for garnish)
INSTRUCTIONS
For Sole: Lightly salt and pepper the sole and lightly roll in flour. Melt butter in a skillet and place sole fillets in it. Sear for approximately 2 minutes on each side on medium heat.
For Miso Butter Sauce: Mix 4 tbsp butter with 2 tbsp of miso paste and chopped green onions in sauce pan, and heat until completely melted and mixed. Salt to taste.
To Serve: plate fish, and spoon the miso butter sauce over the fillets. Garnish with cilantro leaves and lemon wedge.
