PAN—SEARED ROCKFISH with GREEK SALAD

INGREDIENTS
2 4 oz. Pacific Rockfish fillet
1 tsp. avocado oil
¼ tsp. dried oregano
¼ tsp. salt
¼ tsp. ground black pepper
1 roma tomato, diced
1 medium English cucumber, diced
1 small red bell pepper, diced
1 small orange bell pepper, diced
½ red onion, diced
½ C feta cheese, crumbled
¼ C sliced kalamata olives
¼ C Greek salad dressing of choice
Lemon wedges
INSTRUCTIONS
Set air fryer or convention oven to 375 degrees
Line with parchment paper and spray with non-stick avocado oil cooking spray. Drizzle each filet with seasonings and oil and use fingers to spread evenly. Cook until tender and cooked through, about 12-15 minutes.
While the fish is cooking prepare the salad by placing all salad ingredients into a bowl. Mix well with dressing and adjust seasonings as desired.
When the fish is done cooking, plate a nice portion of the salad into a bowl and top with a filet of fish. Squeeze some fresh lemon juice on top and enjoy!
