PAN—SEARED ROCKFISH with GREEK SALAD

 

Serves 2

INGREDIENTS

  • 2 4 oz. Pacific Rockfish fillet

  • 1 tsp. avocado oil

  • ¼ tsp. dried oregano

  • ¼ tsp. salt

  • ¼ tsp. ground black pepper

  • 1 roma tomato, diced

  • 1 medium English cucumber, diced

  • 1 small red bell pepper, diced

  • 1 small orange bell pepper, diced

  • ½ red onion, diced

  • ½ C feta cheese, crumbled

  • ¼ C sliced kalamata olives

  • ¼ C Greek salad dressing of choice

  • Lemon wedges

INSTRUCTIONS

  • Set air fryer or convention oven to 375 degrees

  • Line with parchment paper and spray with non-stick avocado oil cooking spray. Drizzle each filet with seasonings and oil and use fingers to spread evenly. Cook until tender and cooked through, about 12-15 minutes.

  • While the fish is cooking prepare the salad by placing all salad ingredients into a bowl. Mix well with dressing and adjust seasonings as desired.

  • When the fish is done cooking, plate a nice portion of the salad into a bowl and top with a filet of fish. Squeeze some fresh lemon juice on top and enjoy!
